By Easter, the potatoes have chitted and can be planted out.  Remember chitting potatoes in the light provides much stronger sprouts on your seed potatoes.  If chitting is done in the dark, the sprouts are longer and thinner and therefore prone to snapping when planting.

If you want large potatoes, reduce the number of sprouts to encourage all the growth into a few stems.  Planting them closer together with a lot of sprouts will give you a lot more smaller, salad potatoes.
